Traditional ramadan dish: TOPA

Topa is a traditional Ramadan meal that is served at the start of Iftar with somun bread. It is believed that is named after the process of preparing and melting fat (topiti- melting). Today there are plenty variations of preparing topa (with eggs, cheese, chicken, etc.).
Topa with cheese and sour cream
Ingredients:
2 tablespoons of sour cream
2 spoons of cottage cheese
50g butter
100 g of grated cheese
pinch of salt
Put sour cream, cottage cheese and butter in a preheated pan, season with salt and stir over medium heat until the cream melts. At the end sprinkle with grated cheese.
Topa with chicken
Ingredients:
200 g of cooked chicken meat
100 gr sour cream or cream
butter
Chicken broth (chicken water)
Put butter and chicken broth in a heated pan. Add the cream and leave to slowly dissolve, add finely chopped pieces of chicken and leave a few minutes to get it all united.
