TRADITIONAL BOSNIAN RECIPES: PAČE

Necessary ingredients for good pače are veal feet (pače), veal shank, pepper, parsley, salt, garlic and lemon juice.

Preparation:
Wash veal feet and shank thoroughly and put in a pot with parsley, salt and peppe. Add water and cook for two to three hours. Then take the bone out of the water, cool and separate the meat from the bone. Put meat in a bowl, add the water in which the bones were cooked, and put on the heat to boil. Before serving, add finely cut garlic, parsley and lemon juice. Serve while it is hot.
