AŠČINICA, A PLACE FOR GOURMANDS WHO WANT TO ENJOY TRADITIONAL BOSNIAN FOOD

If we talk about traditional food facilities and traditional hospitality in Bosnia and Herzegovina, you just can not miss “aščinica”. First aščinica in Bosnia and Herzegovina was mentioned in the 15th century and they were, in comparison with today's culinary standards, the perfect kitchen.

Aščinski odžak

With a small restaurant like “aščinica”, a bakery has often been included. Unlike traditional restaurants, in the part where you eat, food is also being upgraded - meals are cooked, poured in Sahan and shaped.

Aščinica eating space is usually called chimney or chimney aščinski. This name comes from the chimney warm hearth counter, which is usually located in a prominent area for eating.

Today, as they say in Aščinica ASDŽ in Sarajevo Bascarsija, aščinica is not even a shadow of those in old Bosnian cuisine. Nevertheless, the though that menu in Aščinica is limited and narrow, denies the fact that depending on the season, the average aščinica offers more than 50 different dishes. This, again, confirms richness and heritage of this restaurant.

Aščinice still have very important place in the life of Sarajevo and their traditional way of preparing food, many of which are traditional and Bosnian, attract foreign tourists who visit the capital of Bosnia and Herzegovina.

The most frequent guests who visit Aščinica ASDŽ locals, and surely 60 to 70 percent of them live or work nearby, says the owner of the restaurant Sadet Ajdinović.

In summer, during the season, they have more  tourists and, of course, Bosnians living abroad- they want local food.

It is very interesting approach to food for foreigners who were, in fact, first attracted by the smell and appearance of food. As for the quality and taste, all are satisfied.

 

All groceries must be fresh

 

- There were those who told us that they tried some of the dishes with mistrust , but were delightet by the food. Most wanted food in this small eatery is a kebab.

As for all other meals, all groceries that are used for the preparation of small kebabs are purchased on the same day, so that we do not have to think about the freshness, and it is unnecessary, says Ajdinović, and he makes comparisons with the quality of food that is offered in the fast- food restaurants.

Also to be taken into account is where to purchase groceries, because there must be no mistakes.

In this Aščinica there are real and homemade sour salads, and all vegetables used for this salad is home grown.

Sadeta Ajdinović admits that worst item offered are fizzy drinks, but you can’t go without without them, unfortunately.. The offer is rich and natural,there are homemade juices, but guests must get used to them drink first...

- Otherwise, in the world the trend is to make old traditional recipes and dishes, but here it is like we're ashamed of our meals - says Sadet Ajdinović.

Probably because the city authorities have no understanding for this type of trade, because cooking is craft.
